Easter Cookies- Part 1
If you have been following along with my blog or know me in the slightest, you know that I love the holidays and the traditions that come with them. Baking is an absolute for me and my boys and the upcoming Easter holiday will have us in the kitchen all week long!
Making cookies are always fun, but last year the fun was brought to an entirely new level when we used the Stamp & Style Easter Cookie Cutters. They allowed us to be so creative and the cookies looked delicate too. Deciding to repeat last year's fun, we began yesterday by preparing the dough. The cookie dough is a simple sugar cookie recipe, but before we could begin we prepared our tools and ingredients!
The ingredients listed above are what you will need on hand.
In a small bowl, sift together the flour and the salt and set aside.
We were treated to Daddy being home yesterday so that as Cole and I baked, Daddy was able to take pictures for us!
In another bowl, use an electric mixer to beat the butter on high speed until it becomes creamy, about 2 minutes.
Reduce the speed to medium and slowly add the sugar and beat until light and fluffy, another 2 minutes.
Make time in between to enjoy your baking experience ... Cole always makes that a guarantee, he is so much fun with his comments, ideas and expressions!
Add the egg-
and then the vanilla
and beat for 1 minute, stopping occasionally to scrape down the sides of the bowl.
You are now ready to add the flour mixture in sections to your batter.
Stop the mixer and add half of the flour mixture. Beat on low speed until the flour has been absorbed.
Add the remaining flour and continue beating until the flour has been absorbed and it begins to pull away from the sides of the bowl- about 2-3 minutes.
Group the dough into 2 equal parts and form into a ball. Get saran wrap to wrap the dough in and place in the refrigerator for at least 2 hours or up to 2 days!
In the next day we will roll out our dough and get to the fun part- using our cookie cutters, decorating and baking!! Stay tuned ...
